Testing with 7 64bit ultimate, untouched iso, no updates added, pagefile disbled, hibernation disabled, system restore off, 1 user acount created, gives an installed size around 7.2gb. Removing carefully selected o/s components, windows sounds, themes, wallpapers, uneeded languages/keyboards, 3rd party drivers - chipset, display, printers etc, i can get a final install size of 3.2gb ish. If i have added a load of updates too, the original 7.2 rises to 10gb plus. If i add updates, then slim, i get around 5gb ish, i cannot remember exact figure.

But any saving is a saving, correct? And with carefully chosen service reg files, i get a slimmer 7 that is quicker and well behaved. There is room to slim even further, i am looking at a couple of extra component removals, but even with these, i may only save a few hundred mb more, but that is good enough for me, and i suspect 'most' users for an everyday use pc. For an offline pc, just used for audio editing, playing music, dvd's etc, i can go manic and get around 2.3gb without updates, but i wont be able to use the internet, pc will just become a standalone device.
